Beautiful Christmas Baking

I’m just finishing off my last few baked Christmas treats and these last biscuits have been SO easy that I feel I must share the recipe.  


Makes approx 25 biscuits


– 2 egg whites
– 125g almond meal
– 1 cup caster sugar (would you believe I scored the last bag in the shops today?  I guess I’m not the only one doing some Christmas baking)
– 1/4 cup sifted plain flour (there was no sifting going on at my house)
– Vanilla essence
– Whole almonds for decoration

1. Heat oven to 185C
2. Place all ingredients in the bowl of an electric mixer and beat together for 5 minutes
3. Allow mixture to rest for another 5 minutes
4. Roll into little balls and place on baking paper lined baking tray
5. Place an almond in the centre of each biscuit
6. Bake for 12 – 15 minutes or lightly browned
7. Remove from the oven and cool slightly before placing on racks
